Mmmm, Food

I haven't posted many food pictures lately. Guess we've been doing the same stuff as usual so nothing worth getting too excited over. Although I guess I have made a few new recipes, just didn't take a picture of it! I made some Blueberry Lemon Tea Cakes - those were yummy. Just take a little slice off and eat it as is, mmmm. And I made some Rosemary Parmesan Shortbread (recipe from the show "5 Ingredient Fix"). Those were really good, too.  Just made some more to take to Tamarack with me. And I tried a new ice cream recipe - I wanted to make a butter pecan one, but there were so many different recipes on-line that I kind of gave up on it. Then I got a magazine in the mail and there was a Banana Butter Pecan Ice Cream recipe in it. Yeah! So I gave that a try. It was very good. :) Bits of all of this made it to Aberdeen a few weeks ago when I went, yep even some ice cream.

So, now onto the few pictures of food I do have.

First up is just a little indulgence on my part - My friend Julie had bought these little Mexican cookies at the store and shared some with us. They were good, but reminded me of the shortbread cookies that Girl Scouts used to sell with the fudge layer on the bottom. So I bought a roll of these cookies (88 cents!) and melted some chocolate bark and dipped the cookies in it. Oh my word! Those are really good cookies now!

Tiffani picked out some dinner ideas these last few weeks that were "out of our box". Which is a good thing, but she's kind of a stinker about it! Telling us that we don't know if we'll like until we try it. She is bound and determined to have us try the Mu Shu Vege Roll-ups they made in class. Les has had tofu before and really has no desire to try it again. I think it ranks up there with olives for him - which if you know him, olives rank REALLY high on the dislike list. Anyway - back to what we did have...

This first dish she picked out was from the EZ Meals planner I got for awhile. This was a meal I skipped over because feta cheese has never really appealed to me and the idea of putting warm chicken on cold pasta was just not great either. Put Tiffani really wanted to try it, so we did. Next problem, when we went to make the Greek Pasta Chicken Feast it called for Greek seasoning. I couldn't find it in the store so I did what I usually do - found a recipe on-line. Unfortunately I found 2 really different ones. One had mint, thyme, basil & other spices in it and one had cinnamon & nutmeg & other spices in it. I was kind of leaning towards the one with mint because to me cinnamon & nutmeg are more dessert spices. Boy was I wrong. The day we were going to have it, I was watching a Diners, Drive-Ins and Dives and Guy Fieri was visiting a Greek Restaurant!! The chef was making a Pastitsio (Greek Lasagna) and added cinnamon and cloves! So I mixed up some Greek Seasoning with the cinnamon and nutmeg recipe. Turned out really good.
 
Here is a plate, complete with tomatoes, feta cheese and Greek seasoned chicken over cold pasta. (And now, Gma J, I see why there was chicken left and no tomatoes when we brought you the leftovers.  .... I see 2 pieces of chicken and tons of tomatoes on Tiffani's plate!) You do toss the cold pasta in a balsamic vinegar dressing, but I still think next time I will keep the past warm, but it was a yummy dish.

Tiffani must be in a Greek mood or something, because she also picked to have these Greek turkey burgers. (Les asked her why & she didn't know, just that it looked good!) I have never bought ground turkey before, so that was new as was the dressing which was yogurt with onions & parsley in it. Along with the lettuce, tomato, cucumbers and pita bread it made for a really good burger. I think we'll have it again. :) Maybe when Brianna's home - get her out of her box, too. I'm not sure what is Greek about the burgers though - no cinnamon, nutmeg or cloves in them... the pita bread maybe!?

Yea for Tiffani getting you "out of the box"!!! However, if she tried that with me, I would be thinking I like my box..... It is amazing though how good some of that unusual food is. That food does look good on the plate. Very attractive. You do have a "different" grocery list at times...and it does sound good! I wouldn't mind trying it myself!
