An Army of Monsters & A Road Trip

Tiffani got her first real paid order for cupcakes for a friends' daughter's birthday. Tiffany ordered the fur ball monsters. Tiffani baked them Thursday after school and decorated them Friday after school and then delivered them Saturday morning on the way out of town. Success! :) They are cute and fun, but it took her a long time to do all that fur frosting.

This weekend I was very sick, but we had planned to go to Aberdeen. Les took Tiffani anyway, to give Mom some company for a few days. I curled up in a ball and worked on getting well... But it gave Les the perfect opportunity to go skiing at Pomerelle. He's been wanting to take both girls there for a long time, show off his childhood ski spot. So Monday on the way back home they stopped & skied Pomerelle. Tiffani's text as they were leaving to finish the trek home said it was fantastic. They had a blast! This is just a shot on the way up the mountain. Tiffani can't wait until Brianna is home for a long winter weekend and they can all go together. :)

Not Much to Blog About...

...so here's a picture into our week.

I made this yummy White Chocolate Mix - popcorn, pretzels, m&m's, frosted cheerios & heath bits (Mmmm) and all held together with melted white chocolate chips. My new favorite munchies - good thing I sent half of it to Brianna to try because I'm the only one eating it here. :)

Tiffani made this Ham & Cheese Omelet Roll for dinner Sunday night. One of our favorites. YUM!

Must be a 'breakfast for dinner' week. Tuesday night we had an Oven Apple Pancake. The pancake is made like a German Hot Cake. I was a little worried about it since we usually make it an 11x7 pan and this was baked in the deep dish baker - but it worked. As soon as the oven door was opened it started to fall so this picture doesn't show it's FULL size.

The recipe then called for frozen escalloped apples. What...? Never heard of them, couldn't find them at Winco or Paul's. Searched for a recipe online and made our own... The one we picked was a little bland/sour - not enough sugar & too much lemon juice. But it was good. So after the pancake comes out of the oven you put these warm escalloped apples right on top of the pancake. A new twist on German Hot Cakes, but next time a new apple recipe is called for.

(Escalloped, by the way, means, to bake (food cut into pieces) in a sauce or other liquid, often with crumbs on top) Kind of what we figured, just never heard of it and we were even more perplexed when we couldn't find them in the store. O'well...

This next set of pictures is Simba in the kitchen while Tiff was baking. He is never too far away from her...
Simba's looking for food - Tiffani was making the omelet. Tessa was right there, too, just kept turning her head & didn't want any pictures (takes after Tiffani, I think!)

Just loved Simba's tail in this one.

Also discovered that Simba does NOT like the flash on the camera. He was sitting by Tiffani and I picked up the camera and he backed up a bit...

...and again... before it even flashed... I decided I had enough pictures of him. ;)

Every morning Tiff and I (and the dogs) seem to have the same routine. Simba of course sticks as close to Tiffani as possible. Comes down long enough to eat in the morning and then heads right back upstairs while Tiff gets dressed. Tessa, at this point can be just about anywhere and stays there until we are done eating. Simba comes down with Tiffani, goes outside & then back up with Tiffani. When I go back up to brush my teeth, Tessa comes up and keeps me company.
She will follow me into the bathroom and lay on the floor while I do my hair and teeth. Not sure why she started that, but as soon as I turn the lights out she follows me out of the bedroom and finds a spot to curl up at upstairs.

Simba, as soon as Tiffani starts getting her jacket and backpack runs downstairs ahead of us and into his kennel and waits patiently to be kennelled for the day. He knows when everybody is gone that's his spot to curl up.

Ice Cream

Our love of ice cream comes naturally. Thanks Dad! :) So in honor of Dad's birthday on Friday I made some homemade ice cream. I decided that I wanted to try and make some Mint Chocolate Chip. I followed the recipe that came in the ice cream maker book, but added my own twist (thanks to Alton Brown) by chopping up some Andes' mints (and mini chocolate chips) and mixing them in at the very end. Also one of the many discussions on homemade mint chocolate chip ice cream online was the type and amount of mint flavoring to use. I ended up with just a half a teaspoon of peppermint extract and made the four quart recipe. It turned out really good, I think. The Andes' mints just "make it" though. Mmmmm. Les isn't a big fan of that flavor ice cream and Tiffani has yet to try it. But Grandpa Ron approved and he is the one person that I know that loves ice cream as much as Dad did.
